Chocolate Chip Cookies Sans Eggs (vegan)

OK, so this isn't a cupcake recipe, but these vegan chocolate chip cookies without eggs are just too amazing to keep to myself. I adore chocolate chip cookies. But I don't like using all the butter--and lately not the other animal products either- that recipes typically call for, so I've been tweaking the recipe for years. I've gotten it just right. Without further delay... Chocolate Chip Cookies without Eggs (vegan)

  • 1 cup Brown Sugar
  • 1/2 cup White Sugar
  • 2 tsps. Real Vanilla Extract
  • 1 tsp. Salt
  • 1 tsp. Baking Soda
  • 1/4 cup Earth Balance Butter, melted (about 20 seconds in the microwave)
  • 1/2 cup Blue Diamond Vanilla Almond Milk (sweetened)
  • 2 1/4 cups Flour
  • 1 1/2 cps Chocolate Chips (vegan chips in any sweetness)

Combine all the ingredients except for the flour in a large mixing bowl and mix well (about 50-75 stokes). Add about half the flour and mix until just combined, then add the rest of the flour. Once that is mostly combined, add the chocolate chips. Wrap the dough in plastic wrap and refrigerate for at least a couple of hours, but preferably overnight. Bake for 9-11 minutes at 375 degrees on a Silpat if you have one handy.
