Sometimes life takes hold and a virtual cupcake won't due, but that doesn't mean you have to undo your efforts to stay healthy! These recipes use items you likely have around the house and can be whipped up just as quickly as the boxed and canned variety--the ingredients can even be sourced locally leaving you with the satisfaction of knowing your cupcakes have just what they need and no extra "ingredients".
Vanilla Cake (vegan)
1 cup sugar 1/2 teaspoon salt 2 cups flour 2 1/2 tsps baking powder 1/2 tsp baking soda 1 1/2 cups almond milk 3 tbsp unsweetened applesauce 2 1/2 tsps vanilla extract 1/4 cup canola oil
Preheat oven to 350°. Mix moist ingredients then add the dry, mixing just until combined. Grease the bottom of your cake pans and bake 23-25 minutes or until a toothpick inserted in the center comes out clean. Leave to cool before frosting.
Chocolate Cream Cheese Icing (stiff enough to pipe)
8 oz cream cheese (softened to room temperature) 3 cups powdered sugar 1/4 cup cocoa powder 2 tsps vanilla extract
Use a high-speed mixer to blend all the ingredients together. Spoon into a piping bag or a plastic bag with the tip cut and frost the cooled cake.
